Dad’s Favorite New Peanut Butter Cookies Recipe By Letty

Ever have to make cookies but have less amounts of one or two ingredients than you need? That happened to me when I wanted to make what I called Dad’s Favorite Peanut Butter Cookies. So, I proceeded to half the recipe, only to learn that I had mistakenly added too much of one thing and too little of another. But, go ahead and give this recipe a try; there is a surprise at the end!

Ingredients: 3/4 cup butter 1 1/2 cups smooth unsalted peanut butter 1/2 cup white sugar 1 1/8 cups all purpose flour 1 large egg 1/2 cup packed brown sugar 1/4 teaspoon of salt 3/4 teaspoon of baking powder 3/4 teaspoon of baking soda

A little extra sugar for sprinkling on top Instructions: Preheat the oven to 350 degrees F.

Cream butter, peanut butter, and brown sugar and white sugar together in a bowl. Don’t use the extra sugar for sprinkling yet. Beat in the egg.

In a separate bowl, sift flour, baking powder, baking soda, and salt. I used a large spoon to mix well. Next, stir this into the butter mixture.

Place dough compactly in the form of a long roll on parchment paper. Using the parchment paper to roll, create a roll or chub similar to store-bought refrigerated cookie dough. Refrigerate rolled dough in parchment paper in the refrigerator for 1 hour. (I had always wanted to do that.)

Slice dough to form 1 inch balls and put on parchment-lined baking sheets. Flatten each ball with a fork, creating a crisscross pattern. (Again, I thought they just looked better; they look even.)

Bake at 350 degrees for about 10-12 minutes or until cookies begin to brown.

While warm, lightly sprinkle with sugar.

Makes 2 dozen cookies.

Serve while still slightly warm, but they are equally good cold.

Surprise! They were puffy, short, and light peanut butter cookies! They were so pretty - good enough to give as a gift! Enjoy!

PS. A week later, when I tried the original 4 dozen recipes - I had bought enough of everything - I realized that the cookies I had made the previous week had incorrect measurements. I had mistakenly created a much nicer (short) peanut butter cookie.
