Shrimp Gumbo Recipe
For your New Year’s festivities, “This recipe comes from my grandmother, who lived in New Orleans. I have enjoyed it all my life, and when I make it, everyone loves it. It is a perfect gumbo!” shares today’s contributor.
Shrimp Gumbo In 2 Tbs. of oil, sauté 4 cups cut okra until dry (not slimy), set aside. In a 4 qt. heavy pot, make a roux. Use ½ cup oil and ½ cup flour. Fry ‘til brown, turn burner down and add: 1 cup onion chopped 2 cloves of garlic chopped 1-1/2 cups celery chopped salt and pepper to taste 1 bell pepper chopped Simmer this in the roux until clear.
Add: 1 can 6 oz tomato paste 10 cups water 2 bay leaves Let it come to a boil and simmer for one hour.
Add fried okra and simmer for 30 minutes longer.
Add 2 Ibs. of peeled shrimp and cook for 20 minutes longer.
Remove bay leaves. For the boil: Add 2 Tbs. shrimp or crab to boil. Serve the boil over steamed rice.
