Easy-Peesy Dinner! Salmon Patties with Rice and Asparagus

“No calories... Just kidding! But cooking for myself, I do like to cook a meal with a good source of fiber, vitamins, and complex carbohydrates,” explains visiting Friend Katey Perry.

SALMON PATTIES

Ingredients

1 x 12 oz can pink salmon, bones removed and drained 2 whole eggs 1/4 cup chopped onion 1/4 cup bread crumbs (I prefer Italian style, but any kind works) 2 tablespoons yellow corn meal 1/2 teaspoon salt 1/2 teaspoon ground black pepper 3 to 4 tablespoon oil

Instructions

Mix all ingredients together. Shape your patties like making hamburger patties. In a skillet over medium heat, add oil and allow to get hot. Place patties in skillet, cook them for 3 to 4 minutes on each side or until golden brown. Drain on paper towel. Serve nice and hot!

RICE WITH BROCCOLI

Ingredients

3 1/2 cups water 2 cups Jasmine rice 1/2 cup nutritional yeast 1 teaspoon onion powder 1/2 teaspoon salt 1/2 teaspoon garlic powder 1 cup plant-based milk (I used unsweetened rice milk) 3 cups chopped broccoli

Instructions

In a skillet with a lid, bring your water to a boil.

Add rice and seasoning and stir well. Turn the heat down to a low simmer and cover with a lid.

Cook for 10 minutes.

Stir well, and add 1 cup of plant-milk and all your broccoli. Cover with the lid. If you feel like it’s too dry, you can add 1/2 a cup of water.

Cook for 5-10 minutes or until broccoli is tender. I cooked for 5 and needed a couple more minutes, it will depend on your heat and the size of your broccoli.

This recipe is very versatile, so other quick-cooking vegetables like peas, spinach, or diced bell peppers can be added.

Serve it with a dash of hot sauce for a little kick, if you wish.

EASY STEAMED ASPARAGUS

Ingredients

1 bunch asparagus spears 1 teaspoon butter A sprinkle of lemon pepper ¼ teaspoon salt Instructions

Gather all ingredients.

Place 3 cups water in the bottom half of a steamer pan set. Add butter, salt and lemon pepper and bring to a boil.

Trim dry ends off of asparagus. If spears are thick, peel them lightly with a vegetable peeler.

Place asparagus spears in the top half of the steamer pan set. Steam until asparagus is tender, 5 to 10 minutes depending on thickness.

Serve and enjoy! Don’t have a steamer pan set? A steamer basket inserted into a large pot will do.
